I was asked by Meijer to write about their Produce for Kids partnership. I was sent some promotional items as well as a gift card to help facilitate my post. No monetary compensation was received and all opinions in this post are my own.
Produce for Kids and Meijer have teamed up for healthier families, helping kids. It’s a campaign that helps raise money for local health and nutrition-based classroom projects through donorschoose.org. From September 2nd through the 28th the campaign will raise funds for classroom projects. The more produce that Meijer shoppers add to their carts, the more hope they can give to local children. It’s really just that easy. The campaign may be done for now but that doesn’t mean we can’t still enjoy the recipes and info on the Produce for kids website!
I went shopping at Meijer and loaded my cart up with fresh produce. I had checked out the website www.ProduceforKids.com for recipes and found a delicious frittata recipe that my family would love for breakfast. There are tons of healthy recipes to check out on their site! I love buying my produce at Meijer because it’s usually the best quality around aside from the local farmer’s market. I also picked up some of my favorite juice from Bolthouse farms to go along with our breakfast.
The frittata recipe that I chose had lots of produce in it and it really sounded delicious. Our family adores yellow summer squash, zucchini and tomatoes like crazy! My Meijer was lacking in the summer squash with only one left but I made it work. The Produce for Kids recipe for Zucchini & Summer Squash Frittata was really easy to follow. My dish turned out beautiful and it tasted awesome! I did use a different type of tomato and I added some onion to ours because we love onion plus I bumped it up to 6 portions. I like that the recipes on their website have a servings changer that adjusts the recipes, its so handy!
I chopped up my beautiful veggies from Meijer on one cutting board. I love how colorful vegetables are and I’m glad that this year I made a big effort to incorporate way more into our everyday meals. That is one huge reason why I’ve lost over 50 lbs this year and kept it off.
I did not quite follow the recipe because I felt like it needed some tweaking. I cooked my onions and peppers first, once they were translucent I added in the summer squash and zucchini. After the squashes were in there for a few minutes I added in the tomatoes then the garlic and spinach. I just didn’t want the garlic to burn and adding it in like the recipe said would have meant it would be burnt at the end. I skipped the red pepper flakes because my kids don’t like them. I also added in 1 cup of low-fat cottage cheese for some extra protein. So basically I reinvented the whole recipe but hey I mostly use recipes as a rough guideline in my kitchen anyway! That is the fun of cooking. I have no idea where my finished/end result photo ended up but trust me, it was gorgeous! Such a beautiful array of color from the fresh veggies.
